Creamy Hamburger and Green Bean Soup

We have the privilege of living next-door to my parents for half of the year, so my three younger boys have grown up knowing their “Papa” well. As I was running around the kitchen the other day, out of the blue my 8 year old asked me “What did you like best about Papa when you were growing up?”

I replied “I think my favorite things were that he spent time with me playing games, and that he would take me running whenever I wanted to go” (even though looking back, I am sure I slowed him down considerably).

Hearing this my three boys chimed in “I like it when we go over to his house for breakfast”

“I like it when he teases us”

“He is so funny, he always makes me laugh”

“It is so fun to play games with him and Oma too. No offense or anything mom, but they are just so much funner to play games with!”

“He gives us candy!”

“He lets me watch TV on his lap”

“He is the best Papa”

Aren’t the candid moments with kids the best? This soup from “the best Papa” is a family favorite in our home (always better when he makes it!) and will always be on the menu when I have fresh green beans in the fridge. I personally think it tastes best when made a little extra creamy with a little heavy cream added, but tastes amazing without it too.

Creamy Hamburger and Green Bean Soup

A creamy soup chock full of vegetables and meat, perfect for a winter evening


  • One large or two small onions
  • 1-2 tablespoons oil
  • 3 cloves garlic
  • 1/2 pound chopped carrots
  • 6 ribs of chopped celery
  • 4-5 small peeled and chopped potatoes
  • 1 pound of fresh green beans (ends removed and cut in one inch lengths)
  • 5 cups of chicken broth
  • 1 pound ground beef
  • 1 pint (2 cups) of half and half
  • salt and pepper to taste
  • Step 1 Saute onion in oil over medium heat until soft (about 8 minutes)
  • Step 2 Add garlic and saute another minute
  • Step 3 Add chicken broth, carrots, celery, potatoes and green beans and bring to a boil. Reduce heat to low and simmer until vegetables are tender
  • Step 4 Crumble ground beef into soup and cook for a few minutes until ground beef is cooked through
  • Step 5 Stir in half and half and heat but do not boil
  • Step 6 Season with salt and pepper to taste
