Sunday afternoons in Hawaii would often find us at Kaimana beach with friends, new and old and a big order of Gina’s Korean food to go!  After church the kids would all get a nap in and then we would pick up food and head out to splash in the waves and dig in the sand until the sun went down over the ocean.

The kids would wade in the water, make sand castles, eat, and play little made up games together (the order is important here, the kids would first play in the sand and THEN eat, which would always add a little “texture” to the food. It tasted so good though, that we didn’t mind a “crunch” now and then.) We often took relaxing swims or just sat in the sand while the warm water washed over us and took our troubles away. Those are beautiful memories that we will always cherish.

With our stomachs full and our hearts even fuller, we still had to drag ourselves off the shores as it started to get dark.

Today, we are mainland dwellers and live a thousand miles apart, so gone are the days of lazy afternoons at the beach with our families. We also miss the delicious Korean food that completed those dreamy days at the beach.

Enter one of our favorite Korean recipes.

The recipe isn’t really authentic because it uses ground beef, but the flavors are just right to bring up those delightful memories.  It is spicy and sweet with lots of garlic and a touch of ginger to round out the flavors!

As a bonus, this recipe is made in twenty minutes start to finish, so it is perfect for those busy evenings. It also works well as a low carb (for THM an S ) meal using appropriate sweeteners and served alongside cauliflower rice or other vegetables. You can give the kids rice and you have a quick meal that is sure to be a family favorite!

Korean Beef

A spicy, sweet and flavorful beef perfect for those busy evenings!

Ingredients
  • 2 pounds ground beef
  • 2 tablespoons toasted sesame oil
  • 6 cloves minced garlic
  • 1/2 cup brown sugar or 5 tablespoons Gentle Sweet
  • 1/2 cup soy sauce
  • 1 - 2 teaspoons grated fresh ginger
  • 1 - 2 teaspoons dry crushed red pepper
  • salt and pepper to taste
  • 1 bunch of chopped green onions
Directions
  • Step 1 In a small bowl, mix brown sugar or Gentle Sweet, soy sauce, ginger, and crushed red pepper, set aside
  • Step 2 In a skillet, brown ground beef in sesame oil until cooked through
  • Step 3 Add garlic and stir fry another minute
  • Step 4 Add sauce and let simmer a few minutes to blend flavors
  • Step 5 Season with salt and pepper and top with green onions

Recipe Notes:

For the low carb version of this recipe, our favorite is Gentle Sweet from THM but if you have another favorite sweetener, use whatever you have.
